Reversible & Non-Reversible
A Reversible cutting board or chopping block can be used for food prep on both sides. Edge Grain boards are most often reversible because the "rails" are more consistent in quality on all sides and are easier to match up to make a reversible board.
A Non-Reversible cutting board or chopping block can only be used for food prep on one side. End Grain boards are most often NOT reversible because the nature of the "checkerboard" squares makes it difficult to consistently match the quality of the wood on both sides. The underside of a non-reversible board will be rougher and there will be some imperfections in the wood, such as knot holes, etc.
